Steven Calabrese makes a Vera's home-kitchen riff on Schweinebauch and Krustenbraten: scored pork belly, wheat beer, stock, onions, carrots, Yukon gold potatoes, and a pan sauce pureed from the braise.

Vera's is named for my daughter, but the food started long before she was born. It started with my grandparents, Henry and Kitty Calabrese. They were both always there, and Kitty taught me so much of the cooking that still lives in my hands today.
Some of my best memories are being a kid, watching mobster movies with my grandfather, eating pasta, and learning that a good meal can make a room feel like family. I am self-taught, but I was never without teachers. I had them in my kitchen, at the table, and in the stories that stayed with me.
My wife-to-be, Stephanie Stoudenmire, and I wish our little girl Vera could have met them. She is only 3.5 months old now, and I cannot wait until she is big enough to sit with me and eat pasta. Until then, every tray I make carries a little of Henry, a little of Kitty, and a lot of love for the table in front of me.
